Sheet-pan quesadillas / How to make Long Island Iced tea & a trip to town

Hi Neighbours,
I hope you enjoy today's video. I made a wonderful sheet pan dinner and a nice and refreshing summer drink. Below are the recipes I used in today's video. Also time stamps so if you want to skip the trip to town and jump right to the cooking parts of the vlog.

Taco seasoning mix like the package at the grocery store
Taco Seasoning Mix
2 tsp instant minced onion
1 tsp salt
1 tsp chili powder ( I like to use Mexican Chili Powder)
1/2 tsp of cornstarch
1/2 tsp crushed dried red pepper
1/2 tsp instant minced garlic or 1/4 tsp of garlic powder
1/4 tsp dried oregano
1/2 tsp of ground cumin

Non-Alcoholic Long Island Iced Tea (Pitcher)
*Ingredients:*
2 cups brewed black tea, chilled
2 cups lemon-lime soda (like Sprite or 7-Up)
2 cups cola
2 cups lemonade
¼ cup freshly squeezed lemon juice
¼ cup freshly squeezed lime juice
Ice cubes - Lemon slices, for garnish
Lime slices, for garnish
Mint leaves, for garnish (optional)

*Instructions:*
1. **Prepare the Pitcher**: In a large pitcher, add some ice, combine the chilled black tea, lemon-lime soda, cola, lemonade, lemon juice, and lime juice. Stir well to combine.
2. **Chill**: Refrigerate the pitcher for at least 30 minutes to ensure the drink is well-chilled.
3. **Serve**: When ready to serve, fill glasses with ice cubes. Pour the non-alcoholic Long Island Iced Tea over the ice.
4. **Garnish**: Garnish each glass with lemon slices, lime slices, and mint leaves if desired.
This recipe yields about 8 servings, perfect for gatherings.

Sheet Pan Quesadillas with Ground Chicken
Note: I used double the amount of tortillas as my pan was really large and I fold the corners a little different. You will see in the video . Also my tortillas are smaller than ones suggested to use by most recipes. To make things easier I typed the recipe with less tortillas that would be large

*Ingredients:*
1 pound ground chicken
1 tablespoon olive oil
1 medium onion, diced
2-3 bell peppers of choice diced
2 cloves garlic, minced
1 packet taco seasoning
1 cup corn kernels (fresh, frozen, or canned and drained)
1 cup black beans, rinsed and drained
2 cups shredded Mexican blend cheese
8 large flour tortillas
Cooking spray
Optional toppings: sour cream, salsa, guacamole, chopped cilantro, diced tomatoes

*Instructions:*
1. **Preheat Oven**: Preheat your oven to 375°F (175°C). Line a large sheet pan with parchment paper or lightly grease it with cooking spray.
2. **Cook Chicken and Vegetables**: Heat the olive oil in a large skillet over medium-high heat. Add the ground chicken and cook until no longer pink, breaking it up with a spoon as it cooks. Add the onion, red bell pepper, green bell pepper, and garlic. Cook for about 5 minutes until the vegetables are soft.
3. **Season and Mix**: Stir in the taco seasoning, corn, and black beans. Cook for another 2-3 minutes until everything is well combined and heated through. Remove from heat.
4. **Assemble Quesadillas**: Place 4 tortillas on the sheet pan, letting them overlap slightly and hang over the edges. then place two tortillas in the centre. Spread the chicken mixture evenly over the tortillas. Sprinkle the shredded cheese over the chicken mixture. Place the remaining 2 tortillas on top, covering the filling by Fold the overhanging edges of the bottom tortillas up and over the top tortillas to seal the quesadillas.
5. **Bake**: Lightly spray the top tortillas with cooking spray. Place another sheet pan on top of the quesadillas to press them down and ensure they bake evenly. Bake in the preheated oven for 25-35 minutes until the tortillas are crispy and the cheese is melted.

Remove from the oven and let cool for a few minutes. Cut into squares or wedges and serve with your favorite toppings like sour cream, salsa, guacamole, chopped cilantro, and diced tomatoes.
