Ingredients
2 table spoons of olive oil
salt and Pepper to taste
2 -3 bay leafs
2-3 large carrots (washed and diced)
1-2 white part of large leeks ( washed and white part sliced, only use the white part)
2 large celery stalks washed sliced or diced
spoon of minced garlic (3 cloves)
6-8 cups of veggie or chicken broth
rind of parmesan cheese (optional)
bunch of Kale or spinach ( remove the leaves from stems)
1/2 cup dried white beans. (I used navy beans.they swelled to a cup after being soaked overnight,
796 mls or 28 oz can of diced tomatoes
225 grams or half pound pasta
I used Ditali N 45
In a large pot or Dutch oven over medium heat drizzle in olive oil and sauté carrots, leek and celery for about 10 minutes or so until cooked down stirring often.
Now add in rest of the ingredients bring to boil turn down to simmer until your beans are soft and tender.
Boil some pasta separate like 225 grams or 1/2 pound
like a I like to boil the pasta separate and have on side so everyone can scoop the amount of pasta they would like into their bowl and this way as well the pasta will not being soaking up all the liquid
note: sometimes I add Kale or spinach last few minutes of cooking
