INGREDIENTS
5 potatoes
A small tablespoon of salt
1 onion
1 carrot
350g cabbage
Olive oil
1 egg
Salt
Pepper
Parsley
1 cup flour
10g baking powder
2 tablespoons of tomato paste
Salt and pepper to taste
2 cloves of garlic
½ cup flour
Vegetable oil for frying
RECIPE
Cut the potatoes into pieces. Put them in a saucepan, pour water over them and bring to the boil. Add salt and cook until the potatoes are soft. Drain and leave to cool.
In the meantime, prepare the filling. Chop the onion. Heat the olive oil in a pan and fry the onion in it. Grate the carrot and add to the pan. Chop the cabbage, add it to the pan and mix well. Put the lid on and cook over a low heat for about 5 minutes.
Place potatoes in a bowl. Mash them well. Add the egg, salt and pepper and mix. Chop the parsley and mix into the potato mixture. Add a glass of flour and baking powder. Mix well.
Add the salt, pepper, garlic and tomato purée to the cabbage filling. Mix, add 100 ml water, cover and simmer for a further 5 minutes.
Place the potato mixture on a greased work surface, dust with the remaining flour and knead. Divide into 6 pieces. Roll each one into a round and fill with the cabbage filling. Close the edges. Fry in heated oil until golden brown. Serve with your favorite sauce.
