INGREDIENTS
22 pasta shells (cook a couple extra in case some breaks while cooking)
For the filling:
25g olive oil
6-8 minced garlic cloves
180g roughly chopped spinach
400g ricotta cheese
50g grated parmesan cheese + extra for serving
90g grated mozzarella cheese
1 large egg
Salt and pepper to taste
For the tomato sauce:
1 can tomatoes
2 tablespoons tomato purée
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried basil
1 teaspoon oregano
RECIPE
Cook the pasta al dente. Drain and set aside to cool. Heat the olive oil in a pan. Add the chopped garlic cloves and sauté. Add roughly chopped spinach and fry for 2-3 minutes. Leave to cool. Place the ricotta, parmesan and mozzarella in a bowl. Add the salt, pepper and egg. Add the cooled spinach and mix. Put the tomatoes in another bowl, add the tomato purée and seasoning and mix together. Spread 2/3 of the sauce over the bottom of the oven dish. Fill the shells generously with the cheese filling and arrange in the dish. Spread the rest of the sauce on top. Cover with a lid (you can also use foil) and bake at 190 C for 25-30 minutes, then remove the lid and bake for another 15-20 minutes. Finally, sprinkle with grated Parmesan cheese.
