In the Kurdish language, turnips are called Shalam
One of the most famous and special Kurdistan dishes is Aash Shalmin. Shalam, beets, peas and beans, walnuts, onions, spices and dried basil are the basic ingredients of this delicious dish.
After the beans and beets are cooked, add the separately cooked scallions. And finally hot onion and hot basil were added.
Shalam is actually something similar to Tarkhineh, but with an interesting combination of cooked ground wheat and chopped turnips and turnip leaves, and a layer of cooked wheat and a layer of turnips and chopped turnip leaves are poured into the dish. They let it stand and every few days They shake it until it settles and gets a sour taste and practically ferments, then they spread it on a cloth or a basket the size of the palm of the hand to dry and use it in dishes throughout the year.
