Mung Bean Sprouts 🌱
INGREDIENTS:
• 50g dried mung beans
DIRECTIONS:
1. Rinse the beans and soak them for 8-12 hours, or overnight.
2. Rinse thoroughly under running water and drain, then place the beans in a large strainer or steamer basket. You can also use a sprouter, of course, or a glass jar with a mesh lid, or use muslin cloth and a rubber band. Be sure to place the jar tilted with the lid facing down in a small bowl. This allows excess water to drain quickly and is also great for airflow.
3. Rinse and drain the beans twice a day, in the morning and evening, until they're ready, which is when you see a white "tail" emerge, which is the sprout. With summer temperatures, sprouting occurs faster, and they're usually ready in 3-4 days.
STORAGE:
Once ready, rinse and drain the sprouts before storing them in a lidded container in the refrigerator. I recommend placing a piece of paper towel underneath to absorb excess water and help keep the mung bean sprouts crisp and fresh. Check the sprouts before using them, and you can refresh them with a quick rinse and drain before adding them to your dishes.
